Amsterdam's headline sights earn their reputation, but the real thrill of the city shows up once you step a few streets back from them - this is a city that rewards curiosity, and there's always another canal, courtyard or corner worth chasing.
The Nine Streets reward slow wandering with independent boutiques and cafés between the main canals, while Amsterdam Noord, a short ferry ride across the water, has a rougher, more creative edge that feels worlds away from the postcard centre.
The Jordaan's hidden courtyards (hofjes) are easy to walk straight past unless you know to look for the unassuming doorways leading into them - duck through one and the noise of the street disappears almost instantly. And a canal cruise remains one of the best ways to see the city's architecture properly - from the water, centuries of merchant houses make a lot more sense than they do at street level, especially as the light starts to fade and the windows glow gold.
For something a little more hands-on, book yourself into a stroopwafel-making workshop and learn to press, fill and stack these syrup-caramel waffles the way it's been done since the treat was first invented in Gouda in the early 1800s (yes touristy but worth the mention for an authentic Dutch experience). It's messy, it's sweet, and walking out with a warm one in hand somehow feels more like a souvenir than any postcard could.
Free markets are another easy way to feel like a local rather than a visitor. The Albert Cuyp Market, the country's biggest street market, runs daily. The Lindengracht Market, tucked into the Jordaan every Saturday, is smaller and more local still - fresh produce, cheese, fish and secondhand finds along a street that used to be a canal. Both cost nothing to wander, and both give a far better sense of everyday Amsterdam than anything in the main tourist strip.
The best Amsterdam days often come from picking one neighbourhood and exploring it properly, rather than sprinting between the five most photographed spots in the city.
