The open tulip fields are working farmland - vast, uninterrupted colour stretching to the horizon, but subject to the season's actual weather and a farmer's harvest schedule rather than a garden's planning.
If you only have half a day, Keukenhof is the safer bet. If you have a full day and want the classic "endless rows of tulips" photo, the open fields are worth the trip - and since both sit in the same region, combining them into one day is entirely possible.
